The Wee ‘Un and I decided to make a fruit cake yesterday as our morning tea treat for today. We had a look through a few cookbooks, but couldn’t find anything that was exactly right so we decided to modify one. The starting point was Mary Norwak’s Dundee Cake recipe from The Farmhouse Kitchen, but it had far too many eggs (eight), the wrong combination of fruit, almonds (of which we had none) and a different combination of spices to what we like.
