
We picked our first two pounds of beetroot today before pickling them using another of Mary Norwak’s recipes. It’s a little different to usual as it includes mustard powder in the pickle, which should make for an interesting flavour.
We only pick small amounts of beetroot at a time to ensure we’re using ones that are around the same size. If we waited until the smallest roots were usable to lift them in one batch the largest ones would be tough and woody. The next batch will probably be preserved in a pickle that includes horseradish among the ingredients - that should be very interesting!
