I went to Findlay and Leiper, our local butcher in Insch, this morning to collect our latest batch of pork.
The butcher said it was very good quality and commercial - meaning it had less back fat than we aim for!
It certainly looked good and I think our customers will be pleased with the amount and weight. Each half side will amount to seven joints (between 1.5 and 2.0 kg), 12-13 chops, spare ribs, hocks, trotters, a kidney and a bag of belly fat. Read the rest of this entry »
